01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices, for garnish
09 - Ice cubes, to serve
# Method:
01 - In a large glass jar, dissolve the organic cane sugar into filtered water using a non-metallic spoon.
02 - Incorporate water kefir grains or ginger bug and pour in the lemon juice. Stir gently until evenly mixed.
03 - Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Allow the mixture to ferment at room temperature (68–77°F) for 24 to 48 hours, or until it becomes lightly fizzy and tangy.
04 - Remove and strain out kefir grains or ginger bug using a fine mesh strainer. Discard or reuse cultures as preferred.
05 - Transfer the fermented soda base to a pitcher and blend with orange juice, lime juice, and fresh mint leaves. Stir gently to combine.
06 - Fill glasses with ice cubes, pour the soda mocktail over, and garnish each serving with a slice of orange and additional mint, if desired. Serve immediately to maximize effervescence.
