One-Pan Garlic Herb Steak Bites (Printer View)

Sear steak bites with garlic and parsley for a fast, easy summer main ready in under 20 minutes.

# Components:

→ Steak & Marinade

01 - 1 1/2 pounds sirloin steak, cut into 1-inch cubes
02 - 2 tablespoons olive oil
03 - 1 tablespoon Worcestershire sauce
04 - 1 teaspoon kosher salt
05 - 1/2 teaspoon freshly ground black pepper

→ Aromatics & Herbs

06 - 4 cloves garlic, minced
07 - 2 tablespoons unsalted butter
08 - 2 tablespoons fresh parsley, chopped
09 - 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

→ Optional Garnish

10 - Lemon wedges, for serving

# Method:

01 - Combine steak cubes, olive oil, Worcestershire sauce, salt, and pepper in a mixing bowl. Toss thoroughly and let marinate for at least 10 minutes at room temperature.
02 - Heat a large skillet, preferably cast iron, over medium-high heat until hot.
03 - Arrange steak cubes in a single layer in the skillet. Sear undisturbed for 2 to 3 minutes, then turn and cook for an additional 2 minutes until browned and just cooked through. Work in batches if necessary to prevent overcrowding.
04 - Reduce heat to medium. Push steak to the side of the pan and add butter and minced garlic. Stir until garlic is fragrant, about 30 seconds.
05 - Mix steak bites with the melted garlic butter, then sprinkle parsley and thyme evenly over the steak.
06 - Serve immediately, garnished with lemon wedges if desired.

# Expert Advice:

01 -
  • Hardly any dishes to wash yet every bite tastes like a steakhouse treat.
  • The speed of prep lets you spend more time outside or relaxing rather than in the kitchen.
02 -
  • If you crowd the skillet, the steak won’t sear—they’ll steam and lose that crust.
  • Cutting the steak too small makes them chewy, so aim for 1-inch cubes.
03 -
  • Leave the steak bites undisturbed during searing for best crust.
  • Finish with lemon right before serving to highlight fresh herbs and richness.
