# Expert Advice:

01 -
  • You skip the line and the upcharge, and still get that chewy-creamy combo that makes bubble tea worth it.
  • Its fast enough to make on a whim, but feels like a treat you planned for.
02 -
  • Dont let the pearls sit too long after cooking or theyll get gummy and clump together.
  • If your tea is still hot when you add the milk, it can separate and look curdled, so let it cool for a minute first.
03 -
  • Stir the pearls halfway through cooking so they dont stick to the bottom of the pot.
  • If you like it less sweet, start with a quarter cup of condensed milk and add more to taste.
