# Method:

01 - Blend soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang in a mixing bowl. Toss sliced protein to coat evenly. Allow to marinate for 15 to 20 minutes.
02 - In a blender or food processor, combine ube, sour cream or yogurt, lime juice, honey, and a pinch of salt. Blend until smooth and vividly colored. Chill until ready to serve.
03 - Preheat a skillet or grill pan over medium-high heat. Sear the marinated protein for 4 to 6 minutes, stirring occasionally until thoroughly browned and cooked through. Set aside.
04 - Heat tortillas in a dry skillet or microwave until soft and pliable. For bowls, fluff the cooked rice.
05 - For tacos, spread ube crema over each tortilla. Layer with protein, kimchi, cabbage, cucumber, jalapeño, cilantro, sesame seeds, and pickled onions. To serve bowls, layer rice with toppings and drizzle with ube crema.
