06 - Freeze for at least 4 hours until completely solid.
07 - To serve, briefly run the molds under warm water to release the popsicles.

# Expert Advice:

01 -
  • They look like you spent hours on them, but you'll actually have time to enjoy your guests instead of sweating in the kitchen.
  • The bubbles stay intact if you're gentle, which means each bite fizzes on your tongue in the most delightful way.
  • Adults and kids can both enjoy versions of these, so nobody feels left out of the celebration.
02 -
  • Sparkling wine loses its fizz over time, so add it last and as close to freezing as possible—I learned this the hard way when my first batch turned into flat, sad popsicles.
  • The freezing time varies depending on your freezer temperature, so check them after three hours and again after four to catch them at peak texture before they become rock-solid and impossible to enjoy.
03 -
  • Buy your strawberries a day or two before making these so they have time to develop full flavor—berries picked yesterday always taste sweeter than those picked this morning.
  • If your popsicle sticks keep floating, freeze the mixture for one hour first, then insert sticks when the mixture is partially frozen and stable enough to hold them upright.
